Chocolate Cookies

I made these cookies the other day and the kids really liked them. I used a dark chocolate from Hershey’s so they look a little darker than most chocolate cookies.  They’re really like a chocolate version of a sugar cookie.

Chocolate Cookies


2 1/2 cups  flour
3/4 cup  cocoa

1 teaspoon  soda
1/2 teaspoon salt

1/2 cup shortening 
3/4 cups butter, room temperature
2 cups sugar, plus 1/4 more for dipping
2  eggs
2 teaspoons vanilla


Heat oven to 350 degrees. Put the 1/4 cup sugar in a small bowl. Whisk together flour, cocoa powder, baking soda, and salt. Set aside.


In a  mixer, beat butter, 2 cups sugar, and eggs on medium speed until light and fluffy, about 2 minutes. Add vanilla, and mix to combine. Gradually add dry ingredients, and combine with mixer on low speed.


Roll dough into 1-inch balls. Dip  each ball into sugar. Place on baking sheets about 1 1/2 inches apart, these spread out a little. Bake  8 -10 minutes. Cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.

Yummy. I love chocolate cookies, especially when they're soft and chewy. It's the perfect thing when a chocolate craving hits you.
